Strawberry acidity, less intense than the usual Kenyan coffee, allowing more layers to be noted. Very aromatic and intense.

    This particular Yirgacheffe is naturally sun-dried on raised drying beds, separating it from some of the washed varietals of Yirgacheffe. In Wote Konga the average rainfall is listed as 2000ml per year, with a 3-4 months dry season and an 8-9 month rainy season. 600 farmers are registered with BNT, the miller and exporter, but others sell their cherries, also.

We roast this bean to City Plus and bring out layers of floral notes of roses and lavendar and some sweet hints of Guava fruit, making a very juicy tea-like cup, This a unique and complex coffee that will reveal one layer after another as it cools.

    Ethiopia Sidamo Natural Guji Cooperative

    This is a stunning floral and spicy coffee with distinct lavendar aroma. This natural process coffee is collected from local farmers and brought to the Guji Mill for processing; it is sometimes offered as "Ardi". This is a natural, unwashed coffee meaning that ripe cherries, after harvesting, are left to sun dry on raised beds and no washing nor fermentation is employed. The mill, owned by Girma Edema, is located in the Guji area of the Sidamo zone. After being picked by hand it is dried on a raised bed in the sun for three weeks. During this process sorting the under-ripe cherry is continued by skillful workers. The extra measures taken in sorting make a big difference in roasting and final cup quality.

This coffee has a dry fragrance of dark fruits, with a slight cherry underneath. It has an aroma of dark stone fruits and a bright citric acidity. Flavors of berry, cherry and strawberry, tart sweetness. Pleasant florals. Slight tropical fruits/strawberry pick up as it cools. Complex flavors, well integrated. Medium body. It should be rested for a week to see its full potential. This coffee is naturally sun-dried on raised drying beds.
